Love it! We all know that in 2007 the Food Allergen Labeling and Consumer Protection Act (FALCPA) got with the FDA to finalize the standards of the gluten free labeling. Well..it still isn’t completed! This is a huge deal for those of us with celiac and/or gluten intolerance. After this is finalized, it would mean that all the groceries in the store would have to say whether it has gluten in their ingredients. That would be a huge weight lifted off our shoulders. It would mean that we wouldn’t have to be soooo particular in reading all the ingredients…plus we all know that there are so many ingredients that we can’t even pronounce, let lone try and figure out if it’s gluten or not!
SO…to bring attention to this…our gluten free leaders have gotten together and are going to bake the world’s largest gluten free cake! How awesome is that?!? They are going to hold the first Gluten Free Food Labeling Summit in Washington DC on May 4th, 2011.
